I hope you like my recipe for a down under Christmas cake.
Ingredients:
- 250 Grams of halved pitted dates
- 200 Grams of Brazil nuts
- 3/4 Cup of sugar
- 1 & 1/4 Cups of mixed dried fruit
- 2 Eggs
- 150-200 Grams of glazed cherries
- Grated zest of one lemon
- 2/3 Cup of self raising flour
- 2-3 Tablespoons of alcohol
- 100 Grams of macadamia nuts
Topping:
- Apricot jam
- Glazed cherries
