Flourless CHOCOLATE CAKE

(Makes one 8 or 9-inch round Cake)

Preheat oven to 275 degrees F.

Lightly butter 1 (8 or 9-inch) springform pan. Set aside.

• 1 tablespoon powder sugar to sprinkle top of baked cake, optional
• 6 tablespoons of unsalted butter, cubed
• 6 large egg (remove from refrigerator 1 hour before using)
• 1/2 cup granulated sugar
• 1 tablespoon unsweetened cocoa powder to sprinkle top of baked cake, optional
• 1-1/2 cups semi-chocolate chips

1. In a microwave safe bowl add chocolate chips and butter. Microwave in 30-second increments, stirring each time, until melted. Cool slightly.
2. Separate egg whites from yolks.
3. Whisk egg yolks into chocolate mixture until smooth.
4. In a large mixing bowl add egg whites. Beat egg whites to soft peaks while gradually adding granulated sugar. Beat until stiff and glossy.
5. Whisk 1 cup of eggs whites into the chocolate mixture; gently fold remaining egg whites into the chocolate mixture.
6. Pour into prepared buttered springform pan. Smooth top.
7. Bake for 45 to 50 minutes, or until cake pulls away from sides of pan and is just set in center.
8. Cool completely on wire rack.
9. Dust top with powdered sugar and unsweetened cocoa powder before serving, optional.

TIPS: Chill Cake in an airtight container up to 24 hours. Bring to room temperature for 30-minutes before serving.
