Lockdown special - best out of what you have / Eggplant and soya granules

Ingredients:

  • 3 medium sized tomatoes finely chopped
  • 1/2 tsp mustard seeds
  • Salt to taste
  • 1 Round Eggplant Roasted
  • 1 medium sized onion finely chopped
  • 1/4th Cup Soya granules Soaked in warm water For 20 mins
  • 1 1/2 tbsp mustard oil
  • 2 green chillies finely chopped
  • 1/6th, or 1/8th tsp of crushed red chilli (hot variety)
  • 1/4th tsp turmeric powder
  • 1/2 tsp kashmiri Red chilli powder
  • 7-8 small garlic cloves, or 3-4 large ones Peeled and finely chopped
  • 1/4th tsp garam masala

Method:

  1. Heat oil in a wok, drop in mustard seeds, let it crackle, then lower flame and drop in green chillies and garlic. Let it turn pink. Add onion, turn flame medium high and let onions turn golden brown, stirring Occasionally.
  2. Meanwhile, peel and mash the Roasted Eggplant. Once onions become golden brown, add tomatoes, salt and both red chilli powder, mix. Cook till tomatoes are mushy, then add mashed Eggplant and turmeric powder, mix.
  3. Let Eggplant cook on low medium flame for 3-4 mins stirring Occasionally. Once done, add soya granules garam masala, mix, and let it cook for 3-4 mins again. Dish out and serve with hot Chapatis or paranthis.
