Watermelon Peel Idli based Pizza

Ingredients:

  • 1 cup rice soaked overnight (we use punni rice) 2 days before
  • Salt to taste
  • 1 tsp oregano
  • 1/2 cup each of thinly sliced capsicum, onion and tomatoes (you can use mushroomsand bites sweet corn as well)
  • 1/2 cup urad dal soaked overnight 2 days before along with a tsp of fenugreek seeds
  • 1 cube grated cheese per pizza
  • 1 tbsp oil
  • 2 cups of cubed Watermelon peel
  • 1.5 tsp black pepper powder
  • 2-3 tbsp pizza pasta sauce
  • 1 tsp Red chilli flakes

Method:

  1. Drain out dal and rice separately. Grind soaked dal and fenugreek seeds to a fine paste. Grind rice separately to a fine paste. Both should be of thick consistency, so try and grind them without water. Use water only so much as to make consistency of idli - dosa batter.
  2. Mix both the batters and keep covered on a kitchen slab overnight so as to let them ferment.
  3. Grind watermelon peel without water, then use about 4-5 tbsp water to make that batter too of thick consistency. Mix this batter with the fermented idli - dosa batter along with a tsp of black pepper powder and salt to taste (We added 1/4th tsp of asafoetida also).
  4. Keep a kadhai or large pan on flame with a glass of water, and a stand (if you do not have a stand, you can fill a katori with water and keep it in the kadhai in middle, or just an empty one upside down)
  5. Grease a steel quarter plate with oil, add 3-4 ladelful of batter spreading it evenly. Place it on the stand/ katori Once the water starts boiling. Cover and steam for 10-12 mins, or till idli is steamed nicely. Repeat process and make idlis of quarter plate size with remaining batter. Demould Once they cool a little.
  6. Place a pan on flame (we used electric thermostat pizza/ omelette/ dosa maker). Once hot, grease slightly with oil, place one idli on it, spread pizza pasta sauce and then sliced vegetables. Sprinkle some salt, black pepper. Spread grated cheese, sprinkle herbs and chilli flakes. Cover and cook till crispy from bottom, and cheese has melted. Plate out and serve hot.
  7. If batter is left, you can use it later to make crispy watermelon peel dosas.
