SPICY FRIED CHICKEN NUGGETS:

  • 1 cup Buttermilk
  • 1 teaspoon kosher salt
  • 2 cups vegetable oil
  • 1/2 teaspoon cayenne pepper
  • 1 egg
  • 1/2 teaspoon black cracked pepper
  • 1 pound Chicken, cut into bite sizes
  • 1/2 cup all-purpose flour
  • 1 1/2 cups Panko Japanese-Style Bread Crumbs
  1. Add buttermilk to chicken bites, cover and marinate in refrigerator for 30 minutes or up to 12 hours.
  2. Time to cook nuggets...
  3. Add flour to medium mixing bowl. Set aside.
  4. Add egg, 1/4 teaspoon black pepper, 1/4 teaspoon cayenne pepper and 1/2 teaspoon kosher salt to medium baking pan and whisk until ingredients are well combined. Set aside.
  5. Add panko bread crumbs, remaining black pepper, cayenne pepper and salt to large baking dish. Set aside.
  6. Remove chicken nugget, one at a time, roll in flour bowl, then egg mixture and finish coating in panko crumbles.
  7. Heat oil, in a large heavy skillet or 3 quart dutch oven, over medium heat or until heated to 350-375 degrees F. Add a few coated chicken nuggets at a time, not to over crowd skillet/pan, and fry nuggets for 2-3 minutes on each side or until golden brown.
  8. Drain on rack or papper towels.
  9. Store leftovers in refrigerator in airtight container. Keeps for 2 days.
