This is one of South India's famous chicken curries. Fresh ground spices sourced from across South India forms the base of Chettinad cooking. This region of Tamil Nadu has historically been known for it's spicy and exotic cuisine. Chicken Chettinad is a rich, spicy chicken curry- filled with an aroma emanating from these spices. Ingredients:
- Curry leaves - 15-20
- Chopped tomato - 1 large
- Chopped coriander leaves - 2 tbsp
- Chopped onion - 1 large
- Turmeric powder - 1/4 th tsp
- Chicken - 500 gms
- Ginger garlic paste - 1 tsp
- Lemon juice - 1 lemon
For Chettinad masala:
- Coriander seeds - 1 tbsp
- Cumin seeds - 1 tsp
- Cardamoms - 3-4
- black pepper corns - 15-20
- Cloves - 3-4
- Cinamon stick - 1 inch
Mace:
- Dry red chillies - 4 pcs
- Fennel seeds - 1 tbsp
- Vegetable oi - 3 tbsp
