SPICY CHICKEN FAJITAS:

  • 1 green bell pepper, cored, seeds removed & sliced
  • 1 onion, sliced
  • 1 tablespoon vegetable oil
  • 1 LB. of Chicken tenders
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 2 teaspoons oregano, dried
  • 1 tablespoon olive oil
  • 1/2 teaspoon fresh cracked pepper
  • 1 orange bell pepper, cored, seeds removed & sliced
  • 1 fresh lemon
  • 1/2 teaspoon salt
  • 1 large jalapeno, sliced (remove seeds and ribs for less heat)
  1. In medium bowl...marinate chicken tenders in olive oil, lemon juice, oregano, chili powder, cumin, salt and pepper. Cover and marinate in refrigerator for 15 minutes or over night.
  2. Add sliced bell peppers, sliced onion and jalapeno to medium bowl. Set aside.
  3. Add vegetable to a heavy skillet, over medium-high heat, add marinated spicy chicken. (Chicken should sizzle when add to skillet).
  4. Add bell peppers, onions and jalapenos to chicken. Fry over, medium-high heat for 15-18 minutes. Stirring occasionally.
  5. Transfer SPICY CHICKEN FAJITAS to serving dish.
