Jerk Chicken (Oven) & Cilantro Lime Rice

Making jerk chicken is all about the marinade and it needs to have some heat to be authentic in taste!! There are plenty of premade marinades on the market that will work just fine.
For my homemade marinade, I used these ingredients I used for 10HUGE leg quarters, so adjust accordingly.
You will need:
- 2tbspMinced Garlic,
- 3stalksGreen Onion,
- and 1/2cCanola Oil.
- 2tbsp All Spice,
- 2tbsp Kosher Salt,
- 2tbspMinced Ginger,
- 2tbspGround Nutmeg,
- Juice of 1Lime,
- 1tbspLiquid Smoke,
- Hot Peppers (3 stems and seeds Scotch bonnet-habanero is best. If you cant find them, mix jalapeno and serrano together),
- 2tbspThyme Leaves,
- 1tbspSoy Sauce,
- 2tbspGround Cloves,
- 2tbsp Black Pepper,
- 1/4c Louisiana Hot Sauce,
- 1/2medOnion,
- 2tbspGround Cinnamon,
- 1/4cCaribbean Jerk Marinade(optional),
- 1/4c Brown Sugar,
Start with these ingredients, mix in blender or in food processor to get a paste consistency. Taste at this time, then add any additional ingredients to get the taste and heat you desire.
