FOUR CHEESE MANICOTTI WITH TURKEY SAUCE

- 1 teaspoon sugar
- 1/4 teaspoon crushed red pepper (optional or more)
- 1/2 teaspoon salt
- 1 teaspoon oregano leaves
- 1 (15 oz,) can Diced tomatoes
- 1 teaspoon basil leaves
- 1 (6 oz.) can Tomato paste
- 1/4 teaspoon black pepper
Simmer uncovered 15 minutes.
Cheese filling for cooked paste shells...
- 1 cup shredded provolone cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cups container ricotta cheese
- 2 cups shredded mozzarella cheese
mix well. Stuff pasta.
Add half turkey sauce to a well greased 13" by 9" baking pan, arrange pasta on top on sauce. Spoon remaining turkey sauce over pasta; cover. Bake for 35-45 minutes of until bubbly. Add remaining 1 cup mozzarella cheese on top during last 5 minutes of baking.
Tips: Place cooked dish under broiler until top turns a dark golden brown...keep an eye on it. This dish can be made a day before and refrigerated. Remove from refrigerator 1 hour before baking.
