This incarnation of the dish is the well know Kolkata Tangra based chinese-indian fusion of the original, tailord to suit the palette of the quintisential food loving Bengali. The bland yet subtle original recipe is tempered and flavoured delicately to make it a bit more spicy and tangy.Expat Bongs yearn for this taste of Tangra which is unique to this part of the world and now recognized globally within the conesieur fraternity. This goes realy well with Chinese rice dishes, meinfoon and noodles.
Ingredients:
- Vinegar - 2 tsp
- Chopped garlic - 2 tbsp
- Egg- 1
- Dark soya sauce - 2 tbsp
- Black pepper powder - 3 tsp
- Boneless chicken- 300 gms
- Onion- 2 medium (Cut into cubes)
- Sugar - 1 tsp
- Chicken stock - 11/2 cups
- Red chilli sauce -
- Corn flour - 2 tbsp
- Tomato ketchup - 4 tsp
- Salt - Acording to your taste
- Spring onion greens- 3-4 tbsp
- Capsicum - 1 medium (Cut into cubes)
- All purpose flour (Maida)- 3 tbsp
- Chopped green chillies - 2 tbsp
- Red Chilli sauce - 2 tbsp
Method:
- Marinade the chicken with
- 3 tbsp of maida
- 2 tbsp of corn flour
- 1 tsp black pepper powder
- salt
- and egg
- Now mix all together. In order to get the proper coating, use your
- hands.
- Rest for 15 - 20 minutes.
- Heat a wok with 1/2 cup of oil.
- Now deep fry the marinated chicken cubes till they are golden brown in color.
- Take another wok with 2 tbsp of oil.
- Then add 2 tbsp of chopped garlic.
- Fry Continuously on high flame for few seconds.
- Now add diced onions and saute for another few seconds on high flame.
- Add 1 medium sized diced capsicum
- 2 tbsp chopped green chillies
- Again saute for few seconds.
- Now add 2 tsp of black pepper powder
- 2 tsp of vinegar
- 4 tsp of tomato ketchup
- 2 tbsp of red chilli sauce.
- Mix altogether vigorously on high heat for 1 minute.
- Now add 2 tbsp of dark soya sauce.
- 1 tsp of sugar
- Add a little bit of salt, as soya sauce is salty
- 1/2 cup of chicken stock.
- When it starts boiling, add the chicken pieces
- Cook for 1-2 minutes
- Finally mix some corn flour in water and add.
- Cook till gravy thickens
- Then add handful of spring onions.
- "Tangra" style Chilli chicken is ready to serve.
