CHICKEN & WALUNT STIR FRY:
- 1 (8 ounce) can water chestnuts, sliced & drained
- 3 tablespoons cooking sherry
- 1 (10 ounce) can chicken broth
- 2 cups chicken ( 2 breast or 6 chicken tenders), uncooked 1-inch cubes
- 3 tablespoon cornstarch
- 1 cup green onions, thinly sliced
- 6 Tablespoons oil, vegetable, canola or olive oil
- (rice or noodles)
- 1/2 cup soy sauce
- 1 (8 ounce) can bamboo shoots, sliced & drained
- 1 cup walnuts
- 2 teaspoons sugar
- Combine soy sauce, sherry, sugar and cornstarch in medium bowl. Whisk. Add Chicken. Stir. Set aside.
- In a large skillet, over medium-heat, add 3 tablespoons oil. Heat oil for 1 minute. Add bamboo shoots, chestnuts, green onions and walnuts...cook for 3 minutes. Remove from pan.
- Add remaining oil to skillet. Add chicken mixture. Constantly stir until chicken is golden in color (about 5 minutes). Add chicken broth. Continue to cook for an additional 5 minutes.
- Add vegetables to chicken. Stir until heat through.
- Serve oven hot rice or noodles.
