Chicken stew Bengli style is a one-pot dinner which consists of slow-cooked chicken with ultra-tender flesh along with lightly sauted veggies in a light gravy infused with garam masala, chopped ginger-garlic, cooked with a hint of lemon and a dollop of butter for increased flavour. Easy enough to prepare mid-week and goes well with steamed rice/toast/chapatis. Ingredients:

  • Raw papaya (cut into large cubes) - 1/2 small papaya
  • Grated ginger - 1 tbsp
  • Refined oil - 1 tbsp
  • Chicken - 600 gms
  • Broccoli (Cut into medium florets)- 5-6
  • Beans - 4-5
  • sugar - 1/2 tsp
  • Carrot (cut lengthwise)- 1 medium
  • Crushed garlic - 8-10
  • Black pepper powder- 1 tsp
  • Salt to taste
  • Sliced Onion - 1 medium
  • Potato - 1 large (cut in large cubes)

Whole spices:

  • 3 cardamoms
  • Lemon juice - 1 and 1/2 tbsp
  • 1 bayleaf
  • 3-4 cloves
  • Butter (optional)- 1 tbsp
  • 8-10 pepper corns
  • 1 inch cinamon stick
