CHICKEN QUESADILLAS - How to make QUESADILLAS Recipe

QUESADILLA literally means "little cheesy thing" in Spanish...these lightly toasted flour tortillas filled with grilled seasoned chicken, caramelized bell peppers and onions with freshly shredded Colby Jack cheese will have your taste buds exploding with flavors. CHICKEN QUESADILLA RECIPE:
- 3 cups (more or less) cooked Chicken Fajita
- 6-8 flour tortillas
- 2 tablespoons canola oil
- 2 cups (more or less) Colby Jack Cheese, shredded
Serve with...
- Sour Cream
- Guacamole
- Slices of Avocados
- Pico De Gallo
- Salsa
- Jalapeno Peppers
- Fresh lime or lemon juice
- Fresh Cilantro
- and whatever else you love on your Quesadillas.
To assemble quesadillas...
- Start by adding one tortilla on a flat plate. Add a layer of shredded cheese on top of tortilla, add a layer of cooked chicken, bell peppers and onions, and complete with a second layer of cheese then top with an additional tortilla.
- In a 12-inch skillet or griddle, over medium-heat, add a small amount of oil. Heat oil for 1 minute or until warm. Slide a fork under the assemble Quesadilla, while holding close to skillet, and gently lit and pull Quesadilla off plate into frying pan.
- Fry Quesadilla for 1 minute or until golden in color (keep checking for that golden color on frying side). Once the golden color appears, quickly flip Quesadilla with a large spatula. Continue to fry until golden on both sides.
- Remove from skillet. Using pizza cuter or knife cut Quesadillas into quarters size pieces. Serve immediately or keep warm in a preheat 175 degree oven up to 15 minutes.
