Chicken kobiraji is an acronym for chicken coverage cutlet. This is a style of frying chicken/fish/mutton unique to Bengal. First of all, the chicken is marinated
Then it is fried lightly in a batter made of flour, eggs and bread crumbs. The entire cutlet is then wrapped in a nest-like outer layer or coverage which is prepatred separately with eggs, cornflour some spices etc. This is the traditional way of preparing super crispy chicken kobiraji. - Corn flour - 1.5 tsp
- Black pepper powder - 1 tsp
- Green chillies - 2 pcs
- Lemon juice - 3 tsp
