Butter chicken is amongst the top selling items across "Dhabas" and "restaurants" in Punjab and across northern India. It embodies the fiesty spirit of punjabi cooking, full of spices and zest tempered with butter and cream making it a testy and wholesome accompaniment during meals. Goes really well with tandoori roti, plain paratha and butter/ garlic naan.
Ingredients:
- Chopped ginger - 1 tbsp
- Refined oil - 4-5 tbsp
- Cardamom - 3
- Chopped onions - 3 medium size
- Whole Green chilli - 3
- Chopped coriender leaves - 2-3 tbsp
- Plain Yogurt - 300gms
- Cream - 1/2 cup
- Kashmiri red chilli powder - 1 1/2 tbsp
- Mace (Javitri)
- Roasted cumin powder - 1 tbsp
- Garam masala powder - 1 tsp
- Roasted coriender powder - 1 tbsp
- Chicken - 650gms
- Butter - 50 gms
- Ginger garlic paste - 1 tbsp
- Garlic - 10-12 cloves
- Chopped tomatoes - 3 medium
Method:
Marination:
- Marinate the chicken with
- yogurt,
- 1 tbsp of ginger garlic paste
- 1 tsp Kashmiri red chilli powder
- Salt according to your taste.
- Mix well and refrigarate for minimum 1 hr.
For gravy paste:
- Heat the pan with 2 tbsp oil and 1 tbsp of butter.
- Add 3 cardamoms and mace.
- Then add chopped onion, fry till translucent.
- Now add 1 tbsp chopped ginger
- 10-12 garlic cloves
- 3 whole green chillies.
- Fry for few minutes.
- Now add chopped tomatoes and again cook for few minutes.
- Then add salt to taste, 1 tbsp kashmiri red chilli powder.
- Mix well
- Cover it and cook for 10 minutes on low flame.
- Gravy masala is ready.
- Now we have to make a smooth paste of this masala.
For the main preparation:
- Heat another pan with 2 tbsp oil and 1 tbsp butter.
- Now add the marinated chicken.
- Cook for few minutes.
- Cover it and cook for 15 minutes on medium flame.
- After absorbing all the moisture, add previously made gravy paste.
- Cook for few minutes.
- Now add 1 tbsp cumin powder.
- 1 tbsp coriender powder.
- Little bit salt.
- Mix well.
- Now cover it and cook for another 10 minutes on low flame.
- Now add 1/2 cup fresh cream and mix.
- Add 1 tsp garam masala powder and handful of fresh chopped coriender leaves.
- Your " butter chicken" is ready to serve.
- Serve with butter naan/ tandoori roti/ plain paratha.
