Gondhoraj lebu is endemic to West Bengal and upto a decade back, was a common feature in most Bengali gardens.Hence the use of this in Bengali cooking is a given, even though it is popularly used as a taste enhancement accompaniment because of it's rich aroma. Using this lime with it's leaves with traditional Bengali spices and style of cooking creates this unique dish which is rich and soothingly aromatic at the same time. A perfect weekend dish or can be prepared as a part of a homecoming meal for relatives/friends, this goes well with parathas or plain steamed rice. Ingredients:

  • Black pepper powder - 1 tbsp
  • Tomato paste - 1 large tomato paste
  • Sugar - 1/2 tsp
  • Onion paste - 1 large onion
  • Whisked yogurt - 1/2 cup
  • Coriander powder - 1 tsp
  • Ginger garlic paste - 1 and 1/2 tbsp
  • Vegetable oil- 3 tbsp
  • Salt as per taste
  • Chicken - 600 gms

Whole garam masala:

  • Gondhoraj lebu pata - 4-5
  • Cardamom - 3-4
  • Gondhoraj lebu - 2 pcs
  • Cloves - 3-4
  • pepper corns - 7-8
  • cinamon stick 1/2 inch
