Daler bora or fried lentil dumplings are favourites amongst Indians as both a savoury snack or as sides with a rice-dal staple menu. This dish we have prepared here uses matar dal or split yellow peas. We have created a light, delicately flavoured curry with these lentil dumplings with diced potato wedges using common Bengali spices. This goes well with hot staemed rice. Ingredients:

  • Hing - 1/4 th tsp
  • Turmeric powder - 1/2 tsp
  • Sugar - 2 tsp
  • Mustard oil - 1/2 cup (Frying + cooking)
  • Cumin Powder - 1 tsp
  • Potato (Diced)- 1 large
  • red chilli powder - 1/2 tsp
  • Finely Chopped onion - 1 large
  • Garam masala powder - 1/2 tsp
  • Salt as per taste
  • Cumin seeds - 1 tsp
  • Chopped green chillies - 1 tbsp
  • bay leaf - 1
  • Grated ginger - 1 1/2 tsp
  • Ghee - 1 tsp
  • Matar dal/ split lentils - 1 cup
  • Whole green chilli - 1
