Salmon Mousse Volauvents

Beat an egg & add a tablespoon of milk & whisk together. Use a brush to coat the bottom, sides & top of the volauvents & put them aside to let them soak for a few minutes. Pre-heat the crisper for 3 minutes & then add 100 grams of the volauvent bases to the crisper in the microwave for 3 minutes on cook/grill setting under pies & pastries.

Add 100 grams of smoked salmon to 200 grams of ricotta spread & mix them together with a hand mixer until you have a paste that still has some chunks of salmon in it.

Add the mixture to the bases once heated & crisped. Then add them back to the crisper on grill caramel mode for 60 seconds to heat the paste up.

Sweet Soy Chicken Drumettes:

Ingredients:

  • 1 lemon, cut into wedges to serve
  • 800g chicken drumettes
  • 1 red chilli, finely sliced
  • 2 teaspoon sesame seeds
  • ½ teaspoon ground ginger
  • 2 tablespoons sweet soy (kecap manis)

Method:

  1. Combine sweet soy, ginger, chilli and sesame seeds with chicken; allow to marinate for 30 minutes.
  2. Select COOK /GRILL setting. Turn TIME/FOOD dial to select CHICKEN.
  3. After CHICKEN has been selected, the PREHEAT PAN option will appear. Turn the TIME/FOOD dial to toggle to YES. Press START to confirm your selection.
  4. The microwave will prompt you to insert the empty crisper pan. Insert crisper pan in the upper position. The time will display as 3 minutes. Press START to begin preheating for 3 minutes and time will begin to countdown.
  5. Once the pan has completed preheating, open door and remove HOT crisper pan and arrange drained chicken drumettes, making sure to have any thicker ends positioned towards the outer edges of the crisper pan. Return crisper pan to microwave; close door.
  6. Turn AMOUNT dial to 800g weight. Press START to begin cooking.
  7. Halfway through the cook program, the oven will beep and will flash “stir/turn food”. Pause and carefully pull out hot crisper pan using ovenproof mitts. Turn chicken over and return crisper pan to microwave. Close door and press START.
  8. Once cooking has finished, allow chicken to stand for 5 minutes in hot crisper pan before removing. Serve topped with sliced chilli and lemon wedges.

Brownies:

Serves 12

Cook time: 20min

INGREDIENTS:

  • 1/4 Teaspoon of baking powder
  • 85g plain flour
  • 75 g (3/4cup) chopped walnuts
  • 150g butter, diced
  • 200g dark chocolate
  • 200g brown sugar
  • 3 eggs
  • 2 tablespoons cocoa powder

METHOD:

  1. Place chocolate and butter into a large heat-proof microwave-safe bowl and press the MELT CHOCOLATE button on the shortcuts panel and turn to amount to 200g. Press start button to commence melting. Once finished, carefully take out and stir until smooth and well combined. Cool slightly.
  2. Beat in sugar and mix well.
  3. Whisk eggs and mix through
  4. Sift flour, baking powder and cocoa together and fold through chocolate mixture.
  5. Fold through walnuts and mix until just combined.
  6. Pour into the greased crisper tray. Smooth the surface with a spatula and elevate crisper tray and place on turntable.
  7. Select 50% power and dial up 15 minutes ; Press START/+30SEC button. Cook until just cooked through; centre will be soft. Select Grill Only and dial up 5min. Press start button.
