OLD FASHIONED CORN PUDDING:

  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt (add more or less)
  • 12-14 ears fresh corn, husk & silks removed
  • 2 cups whipping cream
  • 6 large eggs
  • 1/2 cup butter, melted
  • 1/4 cup all-purpose flour
  • 1/4 cup plus 2 tablespoons sugar

Preheat oven to 350 F degrees.

Light grease or stray 13" by 9" baking dish. Set aside.

  1. Cut corn off the cob, scrape milk and remaining pulp from cob; discard cobs (about 6 cups).
  2. In small mixing bowl. Combine sugar, flour, baking powder and salt. Whisk well together. Set aside.
  3. In large mixing bowl. Combine eggs, whipping cream and melted butter. Whisk well together. Add in dry ingredients (sugar mixture). Whisk well. Add corn, fold in gently.
  4. Add corn mixture to prepare baking dish.
  5. Bake 40-50 minutes or until golden on top.
  6. Cool 20-30 minutes before serving.
