FRUIT PUDDING - Microwave Version - Christmas Recipe

This fruit pudding not only tastes fantastic it is also SO easy to make. All you need is a microwave!
Ingredients:
Fruit Topping:
- 2 TBS melted butter
- 1/4 cup brown sugar
- 1 TBS ground cinnamon
- 150ml Rum/Brandy
- 1 1/2 cups dried fruit
- 1 1/2 cups of water
Sponge:
- 1/2 cup milk
- 2 eggs
- 1 TBS mixed spice
- 1/2 cup caster/superfine sugar
- 4 TBS apricot jam
- 125g butter
- 2 cup self raising flour
