Cabbage and Spinach Pudding

Ingredients:

  • 25 - 30 Spinach Leaves washed properly
  • 600 ml milk
  • 1/4th tsp green cardamom powder
  • 1 tbsp Clarified Butter (ghee)
  • 1.25 serving spoonful of sugar
  • 200 gms Cabbage washed and grated/ Chopped Finely
  • 1 tbsp coarsely ground pistachios

Method:

  1. Blanch Spinach, strain, take out from water and cool with cold water. Make a puree out of it.
  2. In the same water, boil the Cabbage, strain and cool with cold water.
  3. In a wok, pour ghee, once it melts, add Cabbage, cook for 2-3 mins. Add milk, cook till it is reduced to half. Add crushed pistachio, cook for a couple of mins, then add sugar.
  4. The kheer will become a little thin once sugar is put. Let it boil till milk is reduced and thick.
  5. Add Spinach Puree and in a teaspoon of milk, mix green cardamom powder and add to kheer
  6. Cook for 3-4 mins more and turn off flame. Dish out and serve.
