Cabbage and Spinach Pudding

Ingredients:
- 25 - 30 Spinach Leaves washed properly
- 600 ml milk
- 1/4th tsp green cardamom powder
- 1 tbsp Clarified Butter (ghee)
- 1.25 serving spoonful of sugar
- 200 gms Cabbage washed and grated/ Chopped Finely
- 1 tbsp coarsely ground pistachios
Method:
- Blanch Spinach, strain, take out from water and cool with cold water. Make a puree out of it.
- In the same water, boil the Cabbage, strain and cool with cold water.
- In a wok, pour ghee, once it melts, add Cabbage, cook for 2-3 mins. Add milk, cook till it is reduced to half. Add crushed pistachio, cook for a couple of mins, then add sugar.
- The kheer will become a little thin once sugar is put. Let it boil till milk is reduced and thick.
- Add Spinach Puree and in a teaspoon of milk, mix green cardamom powder and add to kheer
- Cook for 3-4 mins more and turn off flame. Dish out and serve.
