Bottle gourd Pudding

Ingredients:

  • 2 tbsp ghee (Clarified butter)
  • 250 ml milk
  • 1 tbsp broken cashew
  • 150-200 gms khoa (milk solid)
  • 1 large, or 2 small soft and fresh bottle gourds (approx 1/2 kg)
  • Few almonds cut into slivers
  • 1 tbsp raisins

Method:

  1. Peel Bottle Gourd/s, cut lengthwise into 4 pieces, then cut them into half. Remove the inner fleshy part with seeds. We will use only the outer sold part. Grate these pieces, alternately, you can chop them finely in a chopper.
  2. Heat a pan, keep flame to low and add ghee. Drop in Cashew and raisins, and fry till golden brown, then remove them from pan
  3. Let ghee remain in the pan for halwa/Pudding. Add bottle gourd, mix, then add milk
  4. Keep on stirring and cooking on medium flame till milk is almost Dried up/absorbed.
  5. Meanwhile, in another pan, crush/ mash khoa, and cook it stirring continuously till it changes Form to semi liquid, leaves oil and is slightly pink. Remove and keep aside
  6. Once the milk has been absorbed, add khoa, mix well.
  7. If you like more sweet, then add 1/3 cup sugar, otherwise, just 1/4 Cup Sugar is enough. Add sugar, mix, and let the sugar lete water. Keep on stirring till the halwa has Dried up
  8. Transfer to a bowl, garnish with almond slivers, and serve
