Bottle gourd Pudding

Ingredients:
- 2 tbsp ghee (Clarified butter)
- 250 ml milk
- 1 tbsp broken cashew
- 150-200 gms khoa (milk solid)
- 1 large, or 2 small soft and fresh bottle gourds (approx 1/2 kg)
- Few almonds cut into slivers
- 1 tbsp raisins
Method:
- Peel Bottle Gourd/s, cut lengthwise into 4 pieces, then cut them into half. Remove the inner fleshy part with seeds. We will use only the outer sold part. Grate these pieces, alternately, you can chop them finely in a chopper.
- Heat a pan, keep flame to low and add ghee. Drop in Cashew and raisins, and fry till golden brown, then remove them from pan
- Let ghee remain in the pan for halwa/Pudding. Add bottle gourd, mix, then add milk
- Keep on stirring and cooking on medium flame till milk is almost Dried up/absorbed.
- Meanwhile, in another pan, crush/ mash khoa, and cook it stirring continuously till it changes Form to semi liquid, leaves oil and is slightly pink. Remove and keep aside
- Once the milk has been absorbed, add khoa, mix well.
- If you like more sweet, then add 1/3 cup sugar, otherwise, just 1/4 Cup Sugar is enough. Add sugar, mix, and let the sugar lete water. Keep on stirring till the halwa has Dried up
- Transfer to a bowl, garnish with almond slivers, and serve
