SWEET POATO PIE
1 (9-inch) unbaked pie crust, homemade or store bought
2 cups (2 medium-sized) baked sweet potatoes, raised under cool tap water, pricked a few times with a fork, and baked in a preheated 425 degrees F oven for 1 hour. Set aside & cool.
- 1/4 teaspoon ground ginger
- 1/2 cup evaporated milk
- 1/2 cup packed brown sugar
- 1 teaspoons ground cinnamon
- 1 teaspoons ground nutmeg
- 2 teaspoons vanilla extract
- 1/4 teaspoon ground clove
- 3/4 cups granulated sugar
- 3 eggs
- 1/2 cup sweetened condensed milk
- 1/4 cup butter, softened
- Place unbaked pie crust on a baking sheet (pizza pan works best). Set aside
- Add baked sweet potatoes, sugars, milks, butter, eggs, vanilla, and spices to a medium-size mixing bowl. Using a hand-mixer, beat on low-speed, or by hand, whisk for 2 minutes or until all ingredients are well blended.
- Pour sweet potato mixture into prepared pie crust.
- Bake in a pre-heated 350 degrees F. oven for 1 (one) hour.
- Cool pie on cooling rack for 45 minutes before serving.
TIPS: Pie can be make 2 (two) days before serving. After pie has cooled wrap in plastic and place in an air tight container. Store in coolest part of refrigerator. Bring to room temperature for 2 (two) hours before serving. This pie can be served with whipping cream or ice cream, if desired.
