QUICHE LORRAINE

(Serves 8)

Preheat oven to 350 degrees F.

  • 1-1/2 cups (6 oz.) Swiss cheese, shredded
  • 1/8 teaspoons black pepper
  • 6-8 slices of crispy bacon, chopped
  • 1/8 teaspoon ground nutmeg, optional
  • 2 teaspoons oil
  • 1-1/2 cups Evaporated Milk, or substitute with Half & Half
  • 3 large eggs, at room temperature
  • 1/2 cup onion, chopped
  • 1 unbaked 9-inch (4 cup volume) deep-dish pie shell
  • 1/4 teaspoon salt
  1. Evenly add the Swiss Cheese in the bottom of the unbaked pie shell. Set aside.
  2. In a small saucepan, oven medium-heat, add oil and onions. Cook for 3-4 minutes. Add crispy crumbly bacon. Sprinkle evenly overtop of Swiss cheese.
  3. Add eggs, salt, and pepper in a 4 cup measuring cup (or medium bowl) whisk until well beaten. Add evaporated milk and whisk until blended.
  4. Slowly pour milk mixture into pie shell.
  5. Bake for 35-40 minutes, or until toothpick inserted into middle of Quiche come out clean.
  6. Cool 5 to 30 minutes before serving.

TIPS: Store cooled Quiche in an airtight container in refrigerator up to 3 days!!
