It's all about PEANUT BUTTER PIE today...with a graham cracker crust, crunchy peanut butter (or smooth), cream cheese, heavy whipped cream, vanilla extract and a little sugar will create this (most favorite) southern PEANUT BUTTER PIE!!
PEANUT BUTTER PIE:
- 1- 8" graham cracker crust, store bought or homemake
- 6 oz. chocolate chips, wafers or chocolate candy bar
- 1 teaspoon vanilla
- 1 1/2 cups heavy whipping cream
- 1 (8 oz.) Cream Cheese, set in room temp. for 2 hours
- 1/4 cup sugar
- 1 cup crunchy or smooth peanut butter
- 1 cup powdered sugar
- In a small mixing bowl add heavy whipping cream, 1/4 cup sugar and vanilla. Beat with mixer, high-speed, until whipped (about 2 minutes). Cover and chill in refrigerator until ready to use.
- In a medium size mixing bowl add powdered sugar, peanut butter and cream cheese. Beat with mixer, on low-speed increasing to high-speed, until ingredients are well mixed (about 2 minutes).
- With a large spatula or wooden spoon fold 1/3, at a time, of chilled whipping cream into peanut butter mixture until smooth.
- Add peanut butter pie mixture to graham cracker crust. Cover and chill in refrigerator for up to 2 hours or overnight.
CHOCOLATE SHAVINGS
Melt chocolate in double-boiler or microwave (stir chocolate, when using microwave, every 10 seconds). Spread chocolate on wax paper about 1/8-inch thick, chill for 10 minutes. Break off pieces of chocolate to garnish edge of Peanut Butter Pie.
