BOURBON CHOCOLATE PECAN PIE RECIPE (DERBY PIE)

Preheat oven to 350 F.

1 - 9" unbaked pie shell

  • 1 1/2 cups pecans, chopped
  • 2 ounces unsweetened chocolate
  • 1/4 teaspoon salt
  • 3/4 cup dark brown corn syrup or sugar can syrup
  • 1/4 cup butter, unsalted
  • 3 large eggs, lightly beaten
  • 3 Tablespoons bourbon
  • 1/2 cup sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup brown sugar
  1. In small sauce pan. over low heat...melt butter and chocolate together.
  2. In a large bowl...add eggs, sugars, corn syrup, vanilla, salt and bourbon. Whisk well. Add melted butter and chocolate. Whisk well.
  3. Add unbaked pie crust to cookie sheet (makes transporting pie from counter top to oven much easier). Add pecan to bottom of pie shell. Slowly pour pie filling over pecans.
  4. Bake for 40-45 minutes.
  5. Cool on rack 1-2 hours before serving.

TIP: Pie can be made 1 day before serving by storing (completely cooled pie) in airtight container.
