Classic STRAWBERRY PIE

1- 9" BAKED pie crust, homemade or store bought, set aside.

  • 2 teaspoons fresh lemon juice
  • 2 1/2 tablespoons cornstarch (3 teaspoons in 1 tablespoon)
  • 1/2 cup of sugar
  • 2 teaspoons sugar-free strawberry flavored gelatin
  • 3 cup freshly sliced strawberries (rinsed strawberries before slicing)
  • 1 cup water
  • Whipped cream for pie topping, optional
  1. In a small sauce pan over, medium-heat, add water and cornstarch. Stir until mixture begins to bubble. Cook 1 minutes.
  2. Remove from heat. Whisk in lemon juice and strawberry gelatin. Set aside.
  3. Add sugar to sliced strawberries. Gently toss. Let set for 5 minutes. Stir again.
  4. Add strawberry glaze to strawberries. Gently stir until glaze has coated strawberries. Pour into prepared pie crust. Cover with plastic wrap and chill in refrigerator up to 3 (three) hours or over night.
