STREUSEL BANANA LOAF

Preheat oven to 350 degrees F

Lightly grease and flour 2 loaf pans (8" by 4")

  • 1 cup sugar
  • 1/3 cup all-vegetable shortening, melted and cooled to touch
  • 1-1/2 cups very ripened bananas, mashed
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  1. Whisk together sugar, flour, baking powder, baking soda, and salt until well blended.
  2. Add mashed bananas, melted shortening, and egg to flour mixture. Stir until dry ingredients are just moistened with wet ingredients. DO NOT over mix.
  3. Divide BANANA batter equally into both prepare loaf pans.

STREUSEL TOPPING:

  • 3/4 cups self-rising flour
  • 1/2 cup sugar
  • 1/3 cup butter, cubed
  1. Using two knifes or pastry tool; cute the cubed chilled butter into flour and sugar until it resemble the texture of cornmeal.
  2. Divide streusel mixture equally to tops of banana loafs. Gently pat streusel mixture into batter.
  3. Bake in preheated oven for 45-50 minute or until inserted toothpick come out clean. Cool for 10 minutes. Remove bread from pans to cooling rack.
  4. Once cool enough to handle...cut into desired slices and serve.

TIPS: Store in an airtight container for up to one (1) day.
