Spicy Bread Recipe

Ingredients:

  • 2 tsp brown Sugar
  • 1 tsp mixed herbs
  • 2 tbsp oil
  • 2 tbsp milk powder
  • 2 tsp Salt
  • 2 Cup whole wheat flour
  • 2 tsp Active/ Instant Yeast
  • 1 tsp Flax Seeds
  • 1. 5 Cup warm Water or Milk
  • 1 Cup All purpose flour (maida)
  • 1 - 1.5 tsp Red chilli flakes
  • 1/2 tsp Carrom seeds

Method:

  1. Mix both flours, milk powder, salt, mixed herbs, Flax Seeds, carrom seeds and red chilli flakes. Keep aside.
  2. Mix yeast and brown Sugar in warm water/ milk, cover, keep aside till it Proofs/ starts froth Ingredients.
  3. Once the water/ milk has a thick froth over it, mix oil either in it, or pour over flour, and then with the help of this water, knead a smooth, soft dough. You don't need to knead it too much, 7-8 minutes of kneading is good enough.
  4. Cover with cling film, keep aside overnight, or for minimum 5 hrs so it rises to almost double. Remove cling film, knock the flour down, shape into an oblong loaf, put baking/parchment paper in the baking tin, place this loaf in it, again cover with cling film, and keep aside for an hr so it rises back again.
  5. Preheat oven at 200°C for 10 mins, place the baking tin on lower shelf, bake at 200°C for 25 mins. Now keep the baking tin on under shelf, change setting to grill for about 7 mins to give a little brownish crust. Remove from oven, let it cool a little, remove and have with Honey, butter, spread or plain.
