LEMON POPPY SEED BREAD - How to make Basic Quick Bread demonstration

LEMON POPPY SEED BREAD

Preheat oven to 350 degrees F.

Coat one 8-1/2" by 4-1/2" loaf pan with vegetable shortening & flour, or spray. Set aside.

• 2 large eggs
• 1 cup greek yogurt, plain or lemon flavor
• 3/4 cup confectioners' sugar
• 1-1/4 teaspoon baking powder
• 3/4 cup granulated sugar
• 1 tablespoon poppy seeds
• 2 teaspoons freshly grated lemon zest
• 1/2 teaspoon salt
• 2 tablespoons freshly squeezed lemon juice
• 1 teaspoon pure vanilla extract
• 1-3/4 cups all-purpose flour
• 1/2 cup vegetable or canola oil

1. Add flour, baking powder, and salt into a medium bowl. Whisk well. Set aside.
2. In a large bowl; add eggs (whisk slightly), oil, granulated sugar, vanilla extract, yogurt, poppy seeds, and lemon zest. Whisk until all ingredients are well incorporated.
3. Gradually add the flour mixture into the yogurt mixture, stirring until the flour is no longer visible. DO NOT OVER MIX BREAD BATTER!!
4. Add to prepared bread loaf. Bake, on middle rack, for 55 or 65 minutes, or until toothpick inserted comes out clean.
5. Cool bread in loaf pan for 5 minutes, before transferring onto cool rack. Cool for an additional 20-30 minutes.
6. Meanwhile, to make to lemon glaze topping; add confectioners' sugar & lemon juice to small bowl. Whisk until smooth.
7. Spoon lemon glaze over bread while still warm to touch.

TIPS: Store quick bread, tightly wrapped, at room temperature for 2 days, or freeze for up to 2 months!!
