Bread and Oats uttapam (chilla)

Ingredients:

  • 2 tbsp chopped spring onion greens
  • 1 medium sized tomato finely chopped
  • 1 small capsicum finely chopped
  • Salt to taste
  • 3 tbsp finely chopped fresh green coriander
  • 1 packet of Eno Salt, or 1/2 tsp baking soda
  • 1 medium sized carrot Peeled and grated
  • 7-8 Garlic Cloves Peeled and finely chopped
  • 1/2 Cup Oats
  • 1/2 Cup curd
  • 1 1/2" piece of ginger
  • 1/4th tsp asafoetida
  • 1 medium sized onion finely chopped
  • A few drops of oil
  • 2-3 green chillies finely chopped
  • 1 tsp sugar
  • 1 tsp black pepper powder
  • 4 pieces of brown bread

Method:

  1. Break bread pieces into pieces. In a mixer jar add the bread pieces, Oats, ginger, garlic, curd, salt and sugar. Blend it to a paste, adding little water at times. You will require 3/4th Cup water, give or take a tbsp or two.
  2. Add all vegetables and Powdered spices to this paste, mix well. Place a skillet on flame, and while it heats up, add Eno Salt or baking soda, mix well. Add a few drops of oil on skillet, and Spread with half a Potato, or tissue paper.
  3. Now quickly spread a ladlefull of the batter to make a slightly thick Round uttapam or chilla. Cover and cook for 3-4 mins on medium flame.
  4. You can keep another non stick pan on the other side and repeat the procedure. Once the uttapam is golden brown from the bottom, pour few drops of oil on top side, turn and repeat to make other side golden brown too.
  5. Remove, plate out and serve with green chutney, sauce or Mayonnaise.
