Basic CORN BREAD MUFFINS Recipe

Preheat oven to 400 degrees F.

  • 2 tablespoons vegetable oil
  • 1/2 cup buttermilk
  • 1 tbsp. sugar
  • 1/2 cup milk
  • 1 cup corn meal
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1 egg
  • 1 cup all-purpose flour
  1. In a medium mixing bowl whisk together...flour, cornmeal, salt, sugar, baking soda & baking powder. Set aside.
  2. In a small mixing bowl whisk together...buttermilk, milk, egg & oil. Using a folk...make a well in the middle of flour mixture and slowly add wet mixture. Stir wet and dry ingredients together until just combined. ~DO NOT OVER MIX~
  3. Spoon batter into greased muffin pans until 2/3 full.
  4. Bake for 20-25 minutes.

Serve with stews, soups, casseroles, chili or eat with honey, jams, apple butter or whatever else you desire.
