The typical British way of having tea is to add premium leaves in simmering water with a spot of milk and then to let the leaves rest to infuse the flavours. But it is a popular practice in India to have tea infused with a lot of milk and some spices as well. This innovation infuses the flavours imparted from a heated clay pot into that kind of tea, making for a earthy, smokey and delicately balanced cup of tea. This was first created in a cafe in Pune but it has spawned a few variations in the last few years. This would create a real impact on people who like milk tea. Happy experimenting!
