Easy Chicken Pot Pie Casserole


Hey Rita's Eatas! Ready for a plate/bowl of comfort? Try this easy casserole version of an old classic; chicken pot pie! In my version, I use croissants for the bottom and top crusts, and it provides a flaky goodness to the dish. Please promise me you'll try this one! See you on the next one?

NOTE: Make sure you have a loose veggie/soup-roux mixture between your crusts before baking because it does thicken during baking and the crusts soak up some of the liquid too.

What you need:

  • Chicken broth
  • Southern style hashbrowns (optional)
  • Milk or heavy cream
  • Fozen mixed veggies of choice
  • Cream of chicken soup or homemade roux
  • Croissants
  • Canned or deboned chicken
  • Seasonings
