FLAN
Preheat oven to 325 degrees F.
- 1 1/2 cups whole milk
- 1 (14-oz.) can sweetened condensed milk
- 1/2 cup sugar
- 1 teaspoon pure vanilla extract
- 1 (8-oz.) package softened cream cheese
- 1 (12-oz.) can evaporated milk
- Hot tap water
- 2 egg yolks
- 2 egg
- Add sugar to a non-stick skillet, over medium-heat, stirring often, about 7 minutes until sugar is melted and golden in color. Quickly pour into 6 (16 oz.) ramekins (about 1 tablespoon in each) or in a 9-inch round cake pan...evenly coating the bottom of each baking dish/pan with liquid golden sugar. Place in a large baking or roasting pan; add warm water half way up side of ramekins or cake pan.
- In medium bowl beat room temperature cream cheese, with hand mixer, for 1 (one) minute. DO NOT OVER BEAT. Add eggs and yolks to cream and beat an additional minute. DO NOT OVER BEAT. Whisk in milk, evaporated milk, sweetened condensed milk and vanilla extract until well blended. Mixture should not be foamy and maybe slightly lumpy.
- Pour milk mixture into ramekins or cake pan.
- Bake at 325 degrees F. for 1 hour or until edges are set (the middle will not be set, but will set while cooling). Remove from oven; remove ramekins or cake pan from water, cool completely on rack. Cover with plastic wrap or foil and chill at least 8 hour or longer (no more the 20).
- Run a knife around edges to loosen, and invert onto a serving platter.
Makes 6 (16 oz.) ramekins or 1 9-inch cake pan.
