Sabudana refers to the starch that is extracted from tapioca roots, which is then processed to form spherical pearls that may vary in size. The pearls are produced by passing the moist starch through a sieve under pressure, and then dried. It is a great source of protien and helps in muscle building and in proper development of foetus. Sabudana is wideky consumed by Indian women during religious ocassions when eating other forms of carbohydrates like rice and wheat are shunned as a part of the rituals. This is a more tasty avatar of sabudana in a vada or patty form where it is mixed with mashed potatoes, nuts and Indian herbs and spices and deep fried.
