Pumpkin Pie Overnight Oats
Calories per serving: 683kcal
1 Hokkaido pumpkin about 1.2 kg
150 G Greek yogurt
1 TL Brown sugar
100 G oatmeal
1.2 TL cinnamon
1 Knife tip nutmeg
Preheat the oven to 180 degrees for the pumpkin puree. Cover a baking tray with baking paper.
Wash the Hokkaido, halve and remove the seeds with a spoon. Cut each half in about 6 columns and distribute them on the baking tray.
Bake the pumpkin for about 25 to 35 minutes until it is cooked with a fork while picking it. Remove from the oven, allow to cool briefly and then peel off the shell or scrape gently with a knife.
Puree the pumpkin meat until it has a creamy texture. Maybe stretch with a little water.
For the Pumpkin Pie Overnight Oats, pour 150 g of Greek yogurt into a glass. Spread a few tablespoons of pumpkin puree on top. Brown sugar, oatmeal, cinnamon and nutmeg one after the other. Complete pumpkin puree with another dumpling.
Leave in the refrigerator for at least 3 hours.
Mix everything well and enjoy.
