Summer time is zucchini time. The zucchini botanically belongs to the pumpkins. They are available in oblong or round shape. They are usually yellow or green in our latitudes.

The zucchini is one of my favorite vegetables. Most people will surely ask why? In itself, the zucchini is not very flavorful. That's exactly what I like very much. It is very versatile – whether raw, cooked, fried or processed in the cake, zucchini always make a good figure.

Simple zucchini soup

For my zucchini soup, I have come up with a recipe with ingredients that are always available at home. The potatoes in the soup make sure that it gets creamy and also gets some substance. Even my little man loves this soup, even though she has a kid-friendly green. I like to serve croutons or pigs – as my family likes to say – white bread cubes fried in butter.

A delicious, light soup – perfect as a light lunch or supper

ingredients

  • 1 big onion
  • 1 clove of garlic
  • 400 g of potatoes
  • 1-1.2 kg of zucchini
  • 1-2 carrots
  • 2 bay leaves
  • vegetable stock
  • a little lemon juice or sour cream for rounding off
  • salt
  • pepper
  • Oil or clarified butter

preparation

  1. First, cut the onion and garlic into small pieces. Then heat butter lard or oil in a large pot. If the fat is hot, the onion and garlic are added and steamed glassy.
  2. Meanwhile, the potatoes are peeled and cut into small cubes. When the onions are ready, the potatoes come in the pot. Stir occasionally.
  3. Now the carrot is peeled, chopped and put in the pot as well.
  4. Then wash the zucchini, cut into cubes and add to the pot.
  5. The vegetables are then doused with hot vegetable broth (old, hot water and grained broth). I have always given so much liquid that it ends about 1-2 cm below the vegetables – about 800 ml.
  6. Now come the bay leaves added.
  7. The soup is cooked for about 25 minutes until the vegetables are soft.
  8. Then remove the soup from the heat and purée with a magic wand until a creamy consistency arises.
  9. Season with salt and pepper and refine with lemon juice or sour cream.
  10. Who likes can go for soup coupons. Simply dice white bread or an old roll into cubes and fry in butter until golden brown. Alternatively, a sandwich also tastes good.
