This chickpea salad is one of my favorite salads, as it is stirred in a few minutes, tastes delicious and is filling. Perfect for a lunch in the office.
The time in which I have my little mouse for me is coming to an end. Since December I work again – just two days a week. Soon she will start in the crib and then I start right back into working life.

Getting back to work also means thinking about what my lunch looks like. From time to time I like to go out with my colleagues. But since that goes pretty well into the money and I'm a bit picky, as far as the quality of the food is concerned, I often resort to a home-made salad. I do this the night before and in duplicate, so that Maik is also full of it.
One of my favorite foods is this chickpea salad with tomato and cucumber – I change this basic recipe to your heart's content. Sometimes I add a yoghurt-mint sauce, this time I decided to go for some feta and tuna.
The salad is great – cooked to perfection and full of delicious flavors. The lemon-olive oil dressing is so simple, but also really delicious and fits perfectly.
The salad is great in both winter and summer. Prepared the evening before, it tastes really delicious for lunch the next day. The specified amount is sufficient for 2 people as a main meal.
Quick chickpea salad with feta and tuna
This chickpea salad with feta and tuna is prepared quickly, is full of great flavors and can be modified to suit your mood. My favorite salad for a lunch in the office.

2 Canned chickpeas
2 big tomatoes
75 g feta
1 Can tuna (from sustainable fishing)
4 Tablespoons olive oil
Juice of half a lemon
Rinse the chickpeas under clean water and place in a large bowl.
Cut the cucumber and tomatoes into cubes and add them to the bowl of chickpeas.
Crumple the feta with your hands and give it to the salad as well.
Now comes the tuna. (Tip: If the tuna is in oil, I use the same oil in the salad).
Add the olive oil, lemon juice, salt and pepper to taste and stir well.
If you like, you can chop parsley and stir it.
