“It's snowing, it's snowing, winter is ready …” Is not that a really great winter weather out there? I love the right winter and I'm all the more happy about the great snow. The weekend we spent outdoors with sleigh rides, snowball fight and romp in the snow.

Even the little mouse (now almost 15 months) seems to like the winter. She sat on the sled like a little pro and took us down the mountains with us. As soon as we reached the bottom, she scolded and wanted to get up again. ­čÖé

After the romp in the snow you are usually frozen through a bit. Because a nice warming soup fits perfectly.

I've spiced up this potato soup with savoy cabbage and bacon. This gives the whole thing a spicy note and therefore neat taste.

As a basis for the potato soup, I used a homemade vegetable broth, which I made from my vegetable wort. The recipe for the vegetable spice you can read here again: Recipe vegetable spice

With the help of the vegetable wort and boiling water, you can quickly make yourself a delicious vegetable broth yourself. Just as a hint by the way. ­čśë

If you would prefer to use a beef broth or chicken broth, of course that works just as well.

The preparation of the soup is really very simple. At the end I recommend adding some fresh cream cheese. The herbs and the cream help the soup to intensify the taste experience again.

ingredients

  • 800 g potatoes (floury cooking)
  • 1 Stick leek
  • 2 Stalk celery
  • 2 carrots
  • 3 EL neutral oil (e.g., rapeseed oil)
  • 200 g streaky bacon (diced)
  • 1 1/2 vegetable stock
  • 1.2 TL ground caraway
  • 1 Pinch of freshly grated nutmeg
  • 1 Savoy cabbage about 600 g
  • (optional) 75 g herb cream cheese
  • salt
  • pepper
  • 1.2 bunch parsley

preparation

  1. Peel the potatoes and cut them into small cubes.
  2. Clean the leek and cut it into thin strips.
  3. Wash the celery and cut into strips.
  4. Peel the carrots and cut them into rings.
  5. With a little oil, fry the bacon cubes in a large saucepan until they are crispy.
  6. Take the bacon cubes out of the pot and add the potatoes, the leeks, the carrots and the celery and stir-fry the vegetables for about 5 minutes.
  7. Then add the vegetable broth and cook the vegetables for 10 minutes.
  8. Wash the savoy cabbage and cut into thin strips.
  9. Add the savoy cabbage to the potato soup and let the soup cook for another 10 minutes until the savoy cabbage is soft.
  10. Season the soup with caraway, nutmeg, salt and pepper.
  11. Puree the soup with a magic wand.
  12. Tastes the soup and optionally adds some fresh cream cheese.
  13. Wash the parsley, dab it dry and chop it small.
  14. To serve you give the soup in a bowl and sprinkle a few bacon cubes and parsley on top.

Especially my kids love creamy soups. My little man is currently very picky about what vegetables he eats. As I puree the soup, he no longer sees which vegetables are in the soup and eagerly eats his plate empty. ­čśë
