Last week it was a bit quiet on the Blog. This was not due to the fact that Easter was. I was with my two mice in the last three weeks for a cure – a mother-and-child-cure. We have enjoyed the break very much. Unfortunately, I had not managed in advance for each week a recipe work. But for now, keep it coming.

Since we have already the end of April, it is high time for a asparagus recipe. These healthy bars are currently available everywhere. I admit, I used to be not a big Spargelfan. Asparagus with Hollandaise, I can abgewinnen also, as before, nothing, but there are great Alternatives.

For the soup, your potatoes and asparagus, peel and cut both into pieces. The asparagus you fry in a little olive oil for about 3 minutes. The potatoes sautéed with onions in a pot.

From deletes the Whole thing with cream and water. It will cook the asparagus for about 6 minutes. Then the lemon is added. Pureed the soup and served it with tarragon Oil.

The soup is a perfect quick evening or lunch. Through the cream it is of course very rich in content. But some calories are worth it easy. 🙂

Ingredients

  • 12 Potatoes (approx. 100120 g)
  • 4 Rods white asparagus
  • 5 TBSP olive oil
  • 1 Onion or Scharlotte
  • 200 ml cream
  • 1 Organic Lemon
  • 4 Sprigs Of Tarragon
  • Salt & Pepper

Preparation

  1. Peel the potato and cut them into small cubes.
  2. Peel the asparagus and cut the asparagus tip. The asparagus cut in half at the tips. The Spear cut in approximately 2 cm long pieces. The wooden end of the rod you cut off.
  3. Heated 2 TABLESPOONS of olive oil in a pan and fry the asparagus pieces for about 3 minutes over medium heat. Then you set aside the asparagus.
  4. Peel the onion and cut them into small cubes.
  5. In a saucepan you heated 1 TBSP olive oil and sautéed the onion and potatoes over medium heat for about 3 minutes. Clears it with the cream and 200 ml of water. Add the asparagus (except for the asparagus tips) and let the soup for about 6 minutes on simmer.
  6. Meanwhile, wash the lemon. RUB the zest and squeezed the lemon juice. For the tarragon Oil, wash and dry the tarragon, chop it into small pieces and mixed it with 2 TABLESPOONS of olive oil.
  7. After the soup has simmered, add your 1 TSP of lemon zest, and 2 TABLESPOONS of lemon juice.
  8. The asparagus soup pureed with a stick blender – you can determine for yourself whether the soup would still be a little lumpy or creamy. Then you taste the soup with salt and pepper.
  9. Fill the soup into two bowls and garnish the soup with the tarragon Oil and the asparagus tips.
