Bonus: The ingredients for the golden coconut lentil soup are super easy. Provide for the grandiose color Yellow lentils (Affiliate link), turmeric (the more, the more golden) and carrots. In addition there is coconut milk, vegetable broth and for the taste onion, Knobi, ginger and my one and only Ras el Hanout.
What I like best about it: I usually have the ingredients at home. So if you happen to stop by and have terrible soup hunger, I can always make a big bowl of this velvety-spicy soup of good things.
Oh, and did I mention the color? I mean, DO YOU LOOK AT IT! If that's not the world's most gold-plated winter soup, then I do not know what else to do. And also the toppings! Roasted peanuts, chili and cilantro provide freshness, exoticism and even more aaah and ooohs.
Golden coconut lentil soup – Here's how:
First you fry chopped garlic, ginger and onion in some oil. Then a diced carrot is added. Now put the yellow lentils, vegetable broth, coconut milk and spices in the pan and simmer for 15 minutes, until the lentils are soft. Finally, puree the soup and taste again with salt, pepper and chili. It's that easy!
As a side dish to the soup, I love to eat pita bread or pita bread. Even with the toppings you can let off steam. Allowed is what tastes. Some ideas would be, for example, fresh herbs, chopped nuts, a little oil, fried meat or fried tofu and croutons.

Golden coconut lentil soup
The golden coconut lentil soup is healthy and SO delicious!
Calories per serving: 613kcal
2 Garlic cloves
1 thumb-sized piece ginger
1 EL coconut oil
1 size carrot
250 G Yellow lentils
1 L vegetable stock
400 ml coconut milk
3 TL turmeric
2 TL Ras el Hanout
Salt, pepper and chili
Peel onion, garlic and ginger and finely chop. Heat the coconut oil in a large saucepan and fry the onion, garlic and ginger for a few minutes over medium heat.
In the meantime, peel and dice a carrot. Add yellow lentils, broth, coconut milk, turmeric and Ras el Hanout. Simmer for about 15 minutes until the lentils are tender.
Puree the soup. Either put in a blender or mix with the blender. Season with salt, pepper and chili.
If you do not get yellow lenses, you can just take red lenses.
