Golden coconut lentil soup – Here's how:

First you fry chopped garlic, ginger and onion in some oil. Then a diced carrot is added. Now put the yellow lentils, vegetable broth, coconut milk and spices in the pan and simmer for 15 minutes, until the lentils are soft. Finally, puree the soup and taste again with salt, pepper and chili. It's that easy!

As a side dish to the soup, I love to eat pita bread or pita bread. Even with the toppings you can let off steam. Allowed is what tastes. Some ideas would be, for example, fresh herbs, chopped nuts, a little oil, fried meat or fried tofu and croutons.

  1. Peel onion, garlic and ginger and finely chop. Heat the coconut oil in a large saucepan and fry the onion, garlic and ginger for a few minutes over medium heat.

  2. In the meantime, peel and dice a carrot. Add yellow lentils, broth, coconut milk, turmeric and Ras el Hanout. Simmer for about 15 minutes until the lentils are tender.

  3. Puree the soup. Either put in a blender or mix with the blender. Season with salt, pepper and chili.
