A hearty salad with fruit I found strange earlier – today I love this kind of salads. Fruity sweetness meets a savory – sometimes slightly bitter – taste. So I have the whole taste palette on a plate and everything harmonizes wonderfully.
A big problem in winter is that we can not draw on the diversity of species in the summer. But even in winter, there are some treasures from which we can conjure delicious salads. Like this wonderful fig salad with pomegranate dressing.

For the salad you cut the Raddichio and the cucumbers into slices and the figs in columns. Put everything on a plate and put roasted walnuts and feta (or shepherd's cheese) over it. For the dressing, you seed a pomegranate (how easy it is I'll tell you down in the recipe.) And mix together oil, vinegar, honey, salt and pepper. Already done.
Winter is no reason to miss delicious salads. This salad is great as a starter for a wintry menu. But even alone as a main meal he convinces all along the line.
The fig salad tastes best prepared fresh. The pomegranate dressing can be prepared well, but the other ingredients should be freshly prepared. This is how the salad looks crisp and colorful. The eye eats as you know.
Fig salad with feta, walnuts & pomegranate dressing

Total time:20 minutes
1 Handful of walnuts
200 G Feta (shepherd's cheese)
3 EL White wine vinegar
1-2 TL Liquid honey
4 EL good olive oil
Remove the outer leaves of radicchio, halve the salad, cut into strips, wash and spin dry with a salad spinner.
Wash the cucumber and the figs. Cut the cucumber into thin slices or plane (square grater). Cut the figs in columns.
Hook the walnuts roughly and fry in a small pan.
Now arrange all ingredients of the salad.
Peel the pomegranate. *
In a bowl, stir in the white wine vinegar, honey, olive oil, salt and pepper. To taste and add the pomegranate.
Give the dressing over the fig salad.
* My favorite variant to pomegranate pomegranates is to fill a bowl with water. Then the pomegranate comes under water, where I core it. This prevents the juice splashes everywhere and the pomegranate is released so quickly.
