So we had no bread for the weekend. Going around the corner for the baking bakery would of course be an alternative, but why not just take the opportunity and bake your own rolls?

Emmermehl – by now almost a familiar

Since I do not bake with wheat flour, I used spelled flour and replaced 1/5 of the flour with Emmervollkornmehl.

At the moment I like to experiment with emmer flour. I think the breads and rolls get even more intense flavor – or in other words – more character. The flour is also very rich in protein and minerals.

At my dearest baguette recipe For a while I have been replacing 100-150 g of the flour with emmer flour. For us, the bread is now so tasty and visually perfect.

In the original recipe of chef the ingredients are blended, formed into rolls and then in the cold oven and baked – no separate walking time.

The result is delicious. The spelled-emmer rolls are very compact. If you prefer fluffy bread, I recommend the rolls for at least half an hour to go in a warm place and then to bake.

ingredients

  • 1.2 Cube yeast
  • 1 TL honey
  • 300 ml of lukewarm water
  • 400 g spelled flour
  • 100 g Emmervollkornmehl
  • 1, 5 teaspoons salt
  • Poppy seeds, sunflower seeds, pumpkin seeds, sesame seeds (to taste).

preparation

  1. Dissolve the yeast with a teaspoon of honey in 300 ml of water.
  2. In a bowl mix the two types of flour with the salt.
  3. Add the yeast mixture and knead well.
  4. Forms 12 small rolls from the dough. If you like, you can still roll it in the toppings of your choice.
  5. Optional: Let the rolls go for 30 minutes in a warm place.
  6. Put the rolls together with an ovenproof mold with cold water in the cold oven and set it to 200 degrees.
  7. Bake the rolls for 25-30 minutes.
