Welcome to my new theme series – after-work kitchen. From now on I publish an idea for the after-work kitchen every two weeks. If you have already eaten a warm meal at lunchtime, you probably do not want a sumptuous meal in the evening. Nevertheless, we do not always feel like “only” bread with cheese and sausage for dinner. For this reason, we almost always have a little extra treat, usually in the form of a quick salad, spread or vegetables …
The conditions for my quick after-work kitchen are:

  • a maximum preparation time of 20 minutes (excluding cooking time)
  • Use products that are mostly found in the fridge or seasonal products
  • Of course it has to be delicious!

Finally spring has arrived at our place. The first warm rays of sun spoil us and also the nature. The bees and bumblebees diligently follow their work. With spring new seasonal products are available, such as lamb's lettuce, radishes, spinach and, of course, wild garlic. So we start quite simply, but still tasty with the wild garlic butter.

Wild garlic is related to chives, onions and garlic, which you can smell and taste. Wild garlic grows in our native forests. If he feels well, he prepares quickly. If you do not feel like going to the forest, you can also buy wild garlic from markets or in the supermarket. Fresh wild garlic contains a lot of vitamin C, essential oils, magnesium and iron and has a positive effect on our digestion.

Wild garlic butter needs only a few ingredients. In the simplest form you mince the wild garlic and mix it with a little butter and a pinch of salt. Already a delicious wild garlic butter is ready. For my wild garlic butter I add a teaspoon of mustard for a bit more pep.

ingredients

  • 250 soft butter
  • 1 Bunch of wild garlic
  • 1 TL mustard
  • Salt to taste

preparation

  1. Wash the wild garlic, cut off the stems and mince the garlic leaves. You can either take the knife or a shredder.
  2. Stir the butter with the whisk attachment of your mixer for about 1 minute until creamy. Now add the wild garlic and the mustard to the butter and mix everything briefly.
  3. The butter can now be salted to taste.

In an airtight container, the wild garlic butter keeps cooled for about 5 days.
