Delicious Pad Thai with Mie noodles and chicken

Pad Thai is prepared super fast and the sweet and sour taste of the pasta paired with the salty peanuts is just a wonderful treat.

We already have it by the end of November. Christmas is coming very fast and with me on the blog there is the first recipe this year, which is not vegetarian. Yeah! ????

The reason is actually quite simple. Also Maik can cook wonderfully and is therefore the meat representative in our family. However, I must also say that there are relatively few meat with us.

When we buy meat, we make sure it's organic. Since this is of course much more expensive than in the supermarket around the corner, we do not afford that too often. But it is important to us that the animals we eat have (hopefully) had a pleasant life and have been kept in an appropriate manner. We also like to pay more for this.

But for this dish I have swung the wooden spoon, because you do not need much know-how in terms of roast meat.

I met this recipe in Canada, unlike what you might expect. So it is not an original recipe from Thailand. Nevertheless, I immediately fell in love with it. The sweet and sour taste of the pasta paired with the salty peanuts is simply a wonderful treat.

The recipe variations for Pad Thai are very diverse. By no means should fish sauce, egg and peanuts be missing.

Incidentally, the fish sauce bears the name Nam Pla, In our supermarket, a small bottle cost three euros. The fish sauce lingers in the fridge for a long time and you will need it more often because the dish is so delicious. So in my opinion the investment is worthwhile.

Thai rice noodles are used in a traditional pad Thai. I have replaced these times completely free with Mie eggs noodles. This is the kind of noodles that you also find in Asians in the fried noodles. We like Mie noodles rather than rice noodles. Which noodle you prefer, you can decide freely. The two types of pasta can be easily exchanged. If you want to use glass noodles, then take 250 g.

The recipe will fill three people. But if you have an eater like Maik, who made up two times, it's probably only enough for 2 persons .;)

ingredients

  • 165 Egg Mie noodles (old 250g rice noodles)
  • 1 EL neutral oil (e.g., peanut oil or sunflower oil)
  • 60 ml of ketchup or tomato sauce
  • 40 ml fish sauce (Nam Pla)
  • 60 ml of lime juice
  • 2 EL cane sugar
  • 300 g chicken breast (diced)
  • 2 eggs
  • 2 Garlic cloves
  • 3 spring onions
  • 1 Handful of sprouts
  • 30 g chopped peanuts (roasted and salted)
  • 1 Lime for garnish

preparation

  1. Prepare the noodles according to the package instructions: soak in hot water, then drain the water and add a little oil over the noodles so that nothing sticks together.
  2. The ketchup, fish sauce, lime juice and sugar are mixed in a small bowl.
  3. Heat a large pan with neutral oil and fry the pieces of chicken until well cooked and golden brown in color.
  4. In the meantime, you cut the spring onions into small rings and hook the garlic small.
  5. Take the meat out of the pan, add some more oil and the two eggs. Roast the eggs like scrambled eggs. When it's done, put it aside.
  6. Take the pan again and add some oil. Roast the spring onion with the garlic for about a minute. Then you add the noodles over everything mixes best with a kitchen tongs and let it heat for about 2-3 minutes.
  7. Then add the chicken and pour the sauce over it. Mix everything well and let it warm briefly again – 3 minutes are enough.
  8. Meanwhile, you rinse the sprouts with water and dabbed dry.
  9. Stir the sprouts and the scrambled eggs under the noodles.
  10. The Pad Thai is now ready and can be served with the peanuts and some lime juice.
