instructions

  1. Peel onion and garlic and chop finely. Wash tomatoes and halve, wash spinach and spin dry.

  2. Heat the oil in a large pan and sauté the onion and garlic for two minutes. Add tomatoes and fry for a few minutes, then deglaze with coconut milk. Add the spices and simmer for 10 to 15 minutes.

  3. Add spinach and let it collapse. Season with salt and spices to taste. Enjoy with rice.
