It started with a lonely broccoli in my fridge and the question, what do I do with you? I wanted to try something new. Do not always prepare it in the same way. Since I have the idea to make a broccoli pesto. Prepared just like a pesto with basil, just instead of basil broccoli is used.
The result surprised me very much. I did not think it would taste so good. The broccoli, the parmesan, the pine nuts, the garlic and the lemon are meant for each other.
Broccoli pesto or broccoli mush?
I've been thinking for a long time about whether I can really call the result a pesto, because the texture is more like a mus. Since the preparation corresponds to a pesto, I left it at that.
The broccoli pesto is also excellent as an accompaniment to grilled fish or meat. Since it is quite rich in content and flavor, it needs no further side dish such as potato or rice.
For the preparation boil the broccoli for about 7 minutes soft and then puree it with the other ingredients. As an extra, I rubbed the shell of half a lemon into the broccoli pesto. This subtle citrus note goes perfectly with this pesto.
Broccoli Pesto – The Tastiest way to eat broccoli
Whether it's gnocchis, pasta, potato noodles or as a side dish – this broccoli pesto is a sensation.
Total time:30 minutes
about 350 g of broccoli
45 g pine nuts
40 g Parmesan
1 Organic lemon
1 small garlic toe
50 ml of olive oil
First, the broccoli is cut into small dumplings, the stem peeled and cut small. In a large pot, the water is brought to a boil, lightly salted and the broccoli cooked for 7 minutes.
In the meantime, you can roast the pine nuts in a small pan golden yellow.
Once the broccoli is cooked, pour the water off and allow it to cool briefly.
In the meantime, grate the parmesan finely, peel the garlic clove and rub half of the lemon peel. Then the lemon is cut in half and squeezed out.
Now all the ingredients come in a tall container and are mashed with the magic wand.
Finally, season with salt and pepper.
The pesto can be eaten warm or cold.
