Pita bread with potato stuffing

Ingredients:

  • 20 gms grated cheese (more can be used as desired. Generally for this quantity, 100 gms cheese would be used)
  • 180 gms all purpose flour
  • 180 gms whole wheat flour (you can either make your own combination, or use only one of these)
  • 1 tbsp powdered sugar
  • 300 ml + 80 ml milk
  • 5 medium sized potatoes boiled, peeled and mashed/ grated
  • 1 tsp nigella seeds
  • 1 tsp black pepper powder
  • 8 gms (around 3/4th tbsp) yeast
  • 1 egg + 1/2 tsp oil for wash, or 1 cube of melted butter
  • 1 tbsp olive oil
  • Salt to taste
  • 1 tsp sesame seeds

Method:

  1. Mix yeast, sugar and 1 tsp salt with the flour. Warm 300 ml milk, and mix it with the flour with a spatula, or hands. Depending upon the kind of flour used, a couple of tbsp more milk or water might be used.
  2. Use pull and fold Method for making a slightly soft dough, gradually adding a tbsp full of oil. Cover and keep aside to rise for 30-40 mins.
  3. Meanwhile, mix remaining milk, salt, black pepper and grated cheese with the potatoes to make a soft potato mixture and divide into 6 equal portions.
  4. Once flour has risen to double and all bubbly from inside, divide into 6 equal portions and make balls of these portions.
  5. Spread some flour on working surface, with hands, or gentle use of a rolling pin, spread one ball of dough, keep one portion of potatoes in the middle, pull and close from sides into a ball again.
  6. Use only hands to spread this ball into a 1 cm thick bread. Cover, keep aside and repeat process with rest of the balls. Give butter wash, or egg + oil wash to the bread before baking, and press your fingers on the whole bread to give slightly craters like look to the bread (this process is called shaping of pita bread)
  7. Preheat air fryer on180°C for 5 mins or oven for 10 mins. Temp will be same.
  8. Place the bread on a parchment paper and place directly in air fryer basket. If using oven, place the parchment paper on a baking tray. Air fry for 15 mins, or bake for 25 mins. The soft and yummy potato stuffed pita bread is ready. Serve hot plain, or with sauces of your choice.
