Since we were now in the middle of the April. Spring is coming up, the birds delight us with their songs, the sun sent its first warm rays of the sun to us – only one thing is missing just my luck – fresh fruit and vegetables.

The recipe for the tomato-Hummus is not very different from the traditional Hummus. I have only used less tahini and but tomato paste.

For the baked potatoes

  • 500 g small organic potatoes
  • 2 TBSP olive oil
  • 1 TL sweet paprika powder
  • Salt

For the tomato Hummus:

  • 1 Tin Of Chickpeas
  • 5 TBSP tomato purée (triple concentrated), for example of mom
  • Juice of one 1/2 Organic Lemon
  • 1 EL tahini (optional)
  • 1 Garlic clove, coarsely chopped
  • 1 TL sweet paprika powder
  • Salt &Pepper
  • 1 TSP maple syrup

For the decoration:

  • 12 peeled tomatoes from the can, for example from mom
  • 2 Tablespoon chopped parsley
  • 1/2 Cucumber into sticks, divided

Preparation

For the baked potatoes:

  1. Preheat your oven to 200 degrees.
  2. Cleans thoroughly the skin of the potatoes. If your potatoes do not organic, you can peel the potatoes, of course.
  3. Achtelt the potatoes and mixed them with the olive oil, the paprika powder and the salt in a bowl.
  4. Spread plate the potatoes on a baking.
  5. Bake the potatoes for 15 minutes at 200 degrees. The potato then use the corners and leave for a further 10 minutes until Golden brown. Depending on the size of your potatoes, the indication may vary.

For the tomato Hummus:

  1. For the tomato-Hummus you give the chickpeas, the tomato paste, the lemon juice, the tahini, a chopped clove of garlic, paprika powder and a little salt and pepper in a tall vessel. With the blender you mashed all the ingredients until a creamy mass. If the mixture is too dry, add a little water.
